We had this delicious dessert in Cannakale, Turkey on Christmas Day and enjoyed the candied consistency of the pumpkin. It’s very easy to make and ends up with the appearance of baked apricots.
4 cups pumpkin, peeled and cubed (1 1/2 inches or 4 cm square)
2 cups sugar
juice of 1 large lemon
1/2 cup roughly crushed walnuts
Put the chopped pumpkin in a heavy pan with the sugar and leave to steep for 4 hours, or until the sugar has all dissolved.
Transfer the pan to the stove and add the cloves and lemon juice.
Simmer for at least 30 minutes, until the pumpkin is tender.
As the pieces of pumpkin start to darken, move them around to allow all to cook evenly.
The dish is cooked when all the pumpkin is tender and a deep orange colour.
Serve with the syrup and crushed walnuts.
