Girdle Scones

1 cup plain flour

2 tsp baking powder

pinch of salt

1tbsp butter or margarine

1/2 cup sultanas (can be microwaved on high for 30 seconds to plump up)

1/2 cup milk, cream or soy milk

Oil or butter for pan

Sift flour, baking powder and salt. Rub in the butter with your fingers until the mixture is like fine breadcrumbs. Add sultanas. Add enough milk to mix into a soft dough.

On a floured surface gently form the dough into a circle 1cm thick. Cut into eight triangles.

Heat 1tbsp oil or butter in a hot pan. Carefully transfer scones to the pan. Cook for 5 minutes on each side. Watch the heat and turn down if they start to burn. You may need to move the scones around for even cooking.

Once you’ve perfected making girdle scones at home you can cook them on a gas cooker when camping or on a campfire on a cast iron frying pan. Double the recipe if necessary. They are delicious with jam or honey.
