This is a great winter recipe – traditional baked apples with the addition of Stones Green Ginger Wine. Use green cooking apples like Granny Smith or Bramley as they go nice and mushy when you cook them.
1 apple per person
For each apple you will need:
1 tbsp sultanas
1 tbsp brown sugar
1 tbsp Stones Green Ginger Wine
First turn the oven on to 180 degrees C.
At the widest point of the apple, with a peeler, peel one strip right around the middle – like peeling off the equator.
Next remove the core of the apple while still leaving it whole. If you cut the piece at the base of the core about 4cm wide and 2 cm high, then you can insert it back into the apple again to hold the stuffing inside while it cooks.
If you cut a good chunk out of the top of the apple with the core, then you will have more room for the stuffing.
Put the apples into a baking dish.
Push the sultanas into each apple, then push the brown sugar in on top of the sultanas. It doesn’t matter if it spills over the edges.
Pour the green ginger wine on top of the stuffing in each apple, and add a splash of wine into the dish as well.
Cover with tinfoil and bake for 30 minutes.
Serve hot with ice cream or yogurt.
