Tahini

Tahini is a delicious and nutritious paste made from sesame seeds.  It’s expensive to buy, but very easy and cheap to make yourself.  Hummus made with home made tahini has a nutty flavour.  It can be stored in a sealed container in the fridge for up to 1 month.

1/2 cup sesame seeds

1 large clove garlic

3 tbsp olive or other vegetable oil

2 tbsp lemon juice

1/4 tsp salt

Place a small pan on an element turned to medium and add the sesame seeds.

Turn the temperature to low, and toast the seeds until they are a pale golden colour, shaking the pan every so often to make sure they cook evenly.

Tip the toasted seeds into a food processor and process with a metal blade until a paste is formed.

It takes a few minutes for all the seeds to be ground up.

Add the rest of the ingredients with the motor running and process until smooth.

This recipe makes half a cup of tahini.
