Pea Green Dip in Romanian Bowl

3 cups frozen peas
4 tbsp lemon juice
2 tbsp olive oil or other nice oil
1 large clove garlic (chopped)
handful of mint (roughly chopped)
salt and pepper

Cook the peas and drain them well then cool for a while.
Tip into the food processor with the lemon juice, oil and garlic.
Process until smooth then add the mint and process again. Add salt and ground pepper to taste.
Chill for a couple of hours to improve the flavour.
Serve with crackers.
