Hummus is a Middle Eastern dip which is made with chick peas. It’s expensive to buy but very cheap to make yourself. One cup of dried chick peas becomes 2 cups when soaked and cooked. Soak the chick peas for several hours in cold water, then simmer in plenty of water for about 2 hours until tender. Drain and use in hummus. Cooked chick peas freeze very well. Alternatively, used canned chick peas which are already cooked.
2 cups cooked chick peas
2 tbsp water
3 large cloves garlic, chopped
1/2 cup tahini
1/4 cup lemon juice
1/4 cup olive or other vegetable oil
1 tsp salt
3/4 cup chopped parsley
If you have just made the tahini in the previous recipe, leave it in the food processor and add all the ingredients above except the parsley.
Process until a smooth paste is formed.
Taste it and if you like, add a bit more lemon juice, olive oil or salt.
Add the parsely and process enough to mix.
Variation: Add chopped sundried tomatoes at the end instead of parsely, and use some of the oil they have been marinated in.
